BY MEANS OF A TRANSVERSAL CUT THROUGH THE SHOULDER JOINT (SCAPULAR/HUMERAL), IT IS SEPARATED FROM THE SHOULDER CLOD, NECK AND BRISKET. MUSCLES ARE CUT FROM THEIR BONE ATTACHEMENTS AND BONES REMOVED. EXCESS TENDONS AND CONNECTIVE TISSUE ARE PROPERLY TRIMMED.
