MAY BE PREPARED FROM A HINDQUARTER. FLANK IS REMOVED WHILE THE BACKBONE IS SAWN AT LUMBAR-SACRAL JOINT LEVEL, MAY BE ALTERNATIVELY PREPARED SHANK OFF.
